Soup for supper on Monday ...

... the braised lentils that bedded the chicken yesterday will become a most delicious lentil soup tonight ... the former from the lovely cookbook "A Year in my Kitchen" by Skye Gyngell ... and for dessert there were lavender shortcakes with strawberry coulis and lavender whipped cream ... tonight the coconut panna cotta will sit on the lavender whipped cream and we will pour mango apricot coulis over it .... spring food delights!

P.S. ... strawberry coulis ... simply cut the strawberries in small cubes and put a bit of sugar over them and let them sit a little ... makes a lovely red sauce that moistens the shortcakes ... the mango apricot coulis was made from dried mango soaked in boiling water and peeled and pitted apricots whipped up with that in the blender ... easy peasy lemon squeezy!!!
